"Personal Terroir": A collection of articles on wine, winemaking, and everything surrounding wine, along with previous newsletters sent to subscribers of the 'Lahat HaYayin' customer club. At first glance, 'terroir' cannot be personal: by its original definition it encompasses all environmental influences, excluding the intervention of the grower and winemaker. But is such a terroir even possible? In practice, we influence terroir, shape it and adapt it to our needs: choosing the varieties and rootstocks, planting spacing and row orientation, training and trellising systems, and adopting a cultivation strategy — each person in their own way. I searched for a terroir suited to the wine I want to create, in both character and style. I found the growing region for Lahat wines right at my doorstep, in the Western Upper Galilee. In my view, this is the finest harmony between man and nature; and this is where I tell its story.
